Audits can be conducted before the HACCP plan is developed, immediately afterward to validate it, or after a period of time to verify its correct implementation. Watch the video of a real-life customized audit case for the Claris Hotel & Spa 5*GL in Barcelona.
1
Diagnostic food audit
We monitor all food chain procedures and prepare comprehensive reports (with photographs, scores, comparative graphs, etc.) that inform our clients of their current situation. Based on this audit, a goal and a course of action will be established to achieve it, through the design of a comprehensive food hygiene plan tailored to the client's characteristics, needs, and infrastructure. This plan will be accompanied by an implementation schedule, including the number of planned supervisory visits and their scope.
Before starting to implement the plan, we strive to achieve maximum staff involvement by presenting the results of the diagnostic food audit, introducing them to the HACCP work system, and informing them of the implementation schedule.
2
Validation audit
This is carried out after the HACCP system has been implemented. It will tell us whether the theoretical and practical provisions are applicable to daily work, and if not, we will propose the necessary changes to make them applicable.
3
Follow-up food audit
This audit is conducted after a specific period of time following the implementation of the HACCP system to assess the results. At SAIA, we recommend conducting periodic follow-up food audits to keep the quality manual up to date and adapt it to any new challenges that may arise. This audit is especially important in companies with different work centers, in which case SAIA prepares comparative statistics on the results obtained in each one or graphical comparisons of results over time.
